We purchase from another farm in northeast Kansas (certified organic) a variety of wheat known as Turkey Red. Turkey Red is a heritage wheat that was brought to Kansas by Mennonite immigrants from Russia. and was the primary wheat grown in Kansas pre-1940's when the modernization of wheat began. Turkey Red is know for growing very tall, unlike the current wheat you see in the fields today. Turkey Red also has a different type of gluten in it than modern wheat, and shows promise of being able to be tolerated by those currently stuck with a gluten free diet. We use only fresh ground Turkey Red flour in all of our baked goods you find at local farmer's markets. We also sell fresh ground flour for you to use at home!
